Ultimate Creamy Mac & Cheese Recipe

There’s nothing quite like a warm, creamy, and cheesy dish of Mac & Cheese to bring comfort and joy to any occasion. Whether you’re preparing it for a family gathering, a holiday feast, or just a cozy night in, this recipe is sure to satisfy your cravings and impress your guests. Let’s dive into the ultimate and oh-so-satisfying Mac & Cheese experience! 

Ingredients: 

 

  • 1 lb. Cavatappi Pasta 
  • 1 lb. Mozzarella (Block) 
  • 1 lb. Colby Jack (Block) 
  • 8 oz. Sharp Cheddar (Block)
  • 1 tbsp. Salt (for pasta water) 
  • 1 tbsp. Black Pepper 
  • 1 tbsp. Garlic Powder 
  • 1 tbsp. Paprika
  • 3 tbsp. Butter
  • 3 tbsp. Flour
  • 1 can Evaporated Milk (12 oz.)
  • 1 tbsp. Dijon Mustard
  • 2 cups Heavy Cream 
Instructions: 
  1. Cook the Pasta: 
  • Bring a large pot of salted water to a boil (add about 1 tbsp. salt).
  • Add the cavatappi pasta and cook according to the package directions (usually about 8-10 minutes).
  • Drain the pasta and set aside but save about 1 cup of pasta water in case you need to adjust the consistency of the sauce later. 
  1. Grate the Cheese: 
  • While the pasta cooks, grate all the cheese (Mozzarella, Colby Jack, and Sharp Cheddar) using a box grater or food processor. This ensures the cheese melts smoothly into the sauce. 
  1. Make the Roux: 
  • In a large saucepan, melt the 3 tablespoons of butter over medium heat.
  • Once the butter is melted, add the 3 tablespoons of flour to the pan, whisking continuously. This will create a roux, which will thicken your cheese sauce.
  • Continue cooking and whisking for 1-2 minutes, until the roux turns a light golden color. Be careful not to burn it. 
  1. Add the Dairy: 
  • Slowly pour in the 2 cups of heavy cream while whisking to prevent lumps. Continue to cook for 2-3 minutes until the mixture begins to thicken.
  • Add the can of evaporated milk, whisking to combine. 
  1. Season the Sauce: 
  • Add the Dijon mustard, 1 tablespoon of garlic powder, 1 tablespoon of paprika, 1 tablespoon of salt, and 1 tablespoon of black pepper to the sauce. Stir to combine. 
  • Let the sauce simmer for another 2-3 minutes, continuing to whisk occasionally. 
  1. Melt the Cheese: 
  • Gradually add the grated cheeses (Mozzarella, Colby Jack, and Sharp Cheddar) to the sauce, a handful at a time, stirring constantly. This will ensure a smooth, creamy sauce. Continue to stir until all the cheese is melted and the sauce is smooth and creamy. 

  1. Combine Pasta and Sauce: 
  • Add the cooked cavatappi pasta to the cheese sauce. Stir gently to coat all the pasta with the sauce. 
  • If the sauce is too thick, add a little bit of the reserved pasta water, a tablespoon at a time, until you reach your desired consistency. 
  1. Final Seasoning: 
  • Taste and adjust seasoning, adding more salt, pepper, or garlic powder if needed. 
  1. Bake: 
  • Plate the mixed Mac and Cheese in a bowl or deep dish of your choosing. Layer the Mac and Cheese, starting with the mix first and sprinkle a layer of cheese on top, and repeat the process about 2-3 times depending on the size of your dish.
  • Once you’re done with your final layer, sprinkle the rest of the cheese on top.
  • Preheat your oven to 350°F and bake for 25-30 minutes. 
  • If you want the crispy char on top, broil for an additional 2-3 minutes. 

Optional: 

  • You can top the mac and cheese with breadcrumbs and bake it in the oven at 350°F for 20-25 minutes for a crispy topping.
